This gorgeous drink combines the cooling freshness of cucumber and mint with the sweet-tart burst of berries, all topped with bubbly lemonade for the perfect summer sipper. The beautiful infused concentrate can be made ahead for parties, making this the ultimate crowd-pleasing mocktail that looks as stunning as it tastes. Perfect for hot days, garden parties, or anytime you need a healthy, hydrating pick-me-up!

Ingredients

Scale
  • 1cm thick slice of fresh cucumber
  • 1 fresh mint sprig
  • Small handful of frozen red berries (strawberries, raspberries, or mixed berries)
  • 200ml water for infusion
  • 120ml clear, sparkling lemonade
  • Ice cubes

For Garnish (optional):

  • Extra frozen berries
  • Chopped fresh fruits
  • Cucumber slices
  • Fresh mint leaves
  • Citrus slices

Instructions

  1. Create the Flavor Infusion: Finely chop the cucumber slice and mint sprig into small pieces. Bring 200ml water to a rolling boil in a small saucepan, then add the chopped mint and cucumber.
  2. Infuse the Magic: Turn off heat immediately and let steep for 2 minutes to extract maximum flavor. Add a small handful of frozen berries and let them defrost for 1 minute, then gently crush with the back of a spoon to release their juices and color.
  3. Strain to Perfection: Strain the mixture through a fine-mesh sieve, pressing gently on the solids to extract all the flavorful liquid. This beautiful concentrate will keep in the fridge for up to 24 hours and makes enough for 4 drinks!
  4. Build Your Mocktail: Pour 40ml of your strained fruit and herb concentrate into a tall glass. Fill with ice cubes and top with 120ml sparkling lemonade for that perfect fizzy finish.
  5. Garnish and Serve: Get creative with your garnish! Add frozen berries, fresh fruit pieces, cucumber slices, or mint leaves. Give it a gentle stir to combine all the flavors and serve immediately.

Notes

This recipe makes enough concentrate for 4 mocktails – perfect for entertaining! Use the freshest mint and cucumber for the best flavor. The concentrate actually tastes better after chilling, so making it ahead is ideal. Try different berry combinations like blueberries and blackberries for color variations. For extra fizz, chill your lemonade beforehand. This mocktail is naturally low in calories and packed with hydrating ingredients!
